Cuban-inspired Mojo Pork Tenderloin with Niman Ranch
This recipe was an instant favorite in our house. The combination of bright citrus, garlic, cumin, and oregano creates a marinade that transforms a simple pork tenderloin into something incredibly flavorful. After an overnight soak, every bite was juicy, tender, and packed with fresh, zesty flavor.
Pork tenderloin is a wonderful cut to grill because it’s naturally lean while staying wonderfully tender when it’s cooked with a little care. I grilled it over medium heat, rotating it every few minutes so each side cooked evenly. That steady heat gives the citrus zest time to caramelize on the outside while keeping all of the juicy goodness locked inside.
The fresh mango salsa was the perfect finishing touch. Its sweetness and acidity balanced the pork beautifully and made the whole meal feel bright and summery.
If you’re looking for a grilling recipe that’s impressive enough for guests but easy enough for a weeknight, I’d definitely recommend adding this one to your list.
